Baja Steak Salad

Last night was supposed to be a movie night to see Beauty and the Beast. It was sold out, so it waits for another day. In planning on this happening, though, I prepared a 10-minute dinner. I promise it is actually only 10-15 minutes of actual work. This salad was filling, flavorful, and packed with interesting colors and textures.

I like this because it is also only a two-dish meal, meaning light on the dishes, light on the cleanup, but still BIG on the flavor. Plus it used up several ingredients I had lying around! This is another one of those recipes that you can doctor up and add to based on preferences and flavor combinations you cannot get enough of. For example, if I had thought about it, I would have added fresh avocado in mine- yum.

Baja Steak Salad


  • Steak
    • Flank steak, trimmed of fat and silver skin
    • 1 teaspoon garlic powder
    • 3/4 teaspoon salt
    • 1/2 teaspoon cumin
    • 1/2 teaspoon paprika
    • 1/4 teaspoon oregano
    • 1/4 teaspoon cayenne pepper
  • Dressing
    • Juice of 1 lime
    • Juice of 1 lemon
    • 1 tablespoon olive oil (made need another half or so)
    • 1 tablespoon cilantro
    • salt and pepper
  • Salad
    • Your favorite greens (I used spinach last night)
    • Grape tomatoes, halved
    • Corn (frozen is fine)
    • Cheese (I used colby jack)
    • Anything else you like (tortilla chips, avocados, etc)


  1. Combine the spices, rub the steak, and let it sit for 10 minutes
  2. Preheat a grill pan to medium high. Cook steak and corn together. Cook steak on 7 minutes on each side. Keep moving the corn occasionally
  3. Combine dressing ingredients in the bottom of serving bowl and whisk to combine. Add salad ingredients and mix to coat
  4. Remove steak and let rest 5 minutes. Slice against the grain very thinly
  5. Add to the salad bowl, coat and enjoy!
